Tacos

Ok so the other night I was making left overs from camping for dinner and I decided to cut some time off the next nights cooking time which is always nice during the week, when you are working and cooking and everything else that needs to be done. So this is what I came up with!



Tacos:
1pound of ground turkey/beef
1 medium onion (diced)
garlic salt, pepper (to taste)
1 package taco seasoning (see below for the homemade kind)
1/4 cup to 1/2 cup of water

So I cook up the meat and the onions at the same time, season to taste. Then I put the taco seasoning and the water into a pan( I use ground turkey so I use water to keep the meat moist and the taco seasoning mixes better that way too.)  Then I cool and refrigerate for use.


Now I next night I took out:

10 Small flour tortillas
shredded cheese
salsa(homemade is the best) But you can always use your favorite
shredded lettuce
diced onions


Then I take a deep glass pan I take my tortillas and fold them like I taco and stack the pan till there all that way. Then I take the meat mixture from the night before (I do not heat it that's not needed) and I place meat and cheese into each of the taco shells then I place in the oven at 350 for 10 minutes just till the cheese is melted and the tortillas are going to be a little brown around the edges. Then take them and allow everyone to put what they want in them. I like this because one you are still getting the soft taco but you will get a little bit of a crunch to with out having to fry them also you are using one pan and you can make all ten at once time is a big deal when you don't have much to spear.

Also you can use left over meat from dinner past I have used fried chicken, bbq chicken, it just gives it a different taste but you are not throwing meat out and you once again are saving time!!!



Taco Seasoning Mix

Combine the following ingredients and store in an airtight container. Double, triple, or even quadruple the recipe!
  • 1 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes(option if you want a little bit of heat)
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper

Oven Fried

SO I love french fries, but who doesn't right. but one of the things I think we all hate about french fries is all the fat deep frying so I have come up with a way to cute some of the fat but still have very crispy french fries that taste AMAZING.



OVEN FRIED FRENCH FRIES

8 potatoes (medium size)

3-4 Tablespoons of olive oil (just enough to coat the potatoes)

2 teaspoons of your favorite seasoning



Ok so take and cut the potatoes in strips (your choose the side you want) place in a bowl once all cut up. Then coat well with the olive oil and your seasonings ( I have found different french fry flavoring at Cabelas so its fun to try those as well)

Place in oven at 400 for 20 minutes then take and flip the fries over the fries make sure the fries are in a single layer. place back in over for 10 minutes at 400 degrees then turn your broiler on and let them finish baking for another 10-15 minutes until golden brown.

Makes enough for about 4 servings

Skinny Monkey Cookies

Ok so they are call Skinny Monkey Cookies ingredients: 3 bananas 2 cups old-fashioned oats 1/4 cup creamy peanut butter 1/4 cup unsweetened cocoa powder 1/3 cup unsweetened applesauce 1 tsp. vanilla extract Dash of cinnamon (optional) Directions: Preheat oven to 350°F. Mash bananas in a large bowl, then stir in remaining ingredients. Let batter stand for approximately 20 minutes, then drop by teaspoonfuls onto ungreased cookie sheet. Sprinkle with cinnamon if desired. Bake 10-12 minutes. Freezing Directions: Cool completely, then place cookies in a freezer bag. Seal, label, and freeze. when they call for peanut butter I get my at the health food store made fresh so I know there is no sugar add. They are amazing and they never get to the freeze part they always always get eaten I took them to a birthday party and they wanted these over the cake lol(i made the cake too lol)
