A little bit of Salsa

So my favorite salsa to get at Mexican restaurant is pico de gallo, then while eating out one day I saw I tried corn salsa and I knew I had to go home and make my own recipe. So I went to the store and bought everything I thought would be good and came home and turned on the grill. I went in side and shucked the corn and then placed it on a hot grill and went inside to start working on everything else when I hear the corn start popping, lol. So heres the recipe



My Corn Salsa

3-5 ears of corn (if not in season you can you 2 cans of corn just wash the salt off)
2 cans of diced green chills
1 jalapeño 
2 tablespoon lemon juice
1 medium onion(your choice of color I use purple or white)
garlic to taste
salt and pepper to taste



take and roast the corn on the grill, dice the onion and the Jalapeño. Once the corn is grilled to your liking then take and let the corn cool and take corn off the ears then take and mix everything in a bowl once done. Place in fridge for up to 24 hours to let the taste merry, then serve.

Not just any pie!!!

Ok so every Thanksgiving and Christmas  there are two things that my family begs my aunt to make for desserts, one is apple cake (which I want for my birthday too) and one is Peanut butter pie. So today I have decided to share one recipe with you. I do make the pie for potlucks and I always make two, there are a lot of people who say "oh I do not like peanut butter" but then they try this and end up walking away with the recipe.



My Family Peanut butter pie

1 cup smooth peanut butter
1 cup sugar
1 8oz container of whip cream
1 8oz cream cheese
1 tablespoon melted butter
1 teaspoon vanilla
1 graham cracker crust
chocolate syrup


Take and combine cream cheese, sugar, vanilla and melted butter mix well(mix with a hand mixer or a stand mixer till smooth) than add peanut butter and  a drizzle of chocolate syrup and mix again. Then fold in the whip cream with a spatula. Then add to the crust and then top with chocolate syrup to taste. Place in fridge for at least 2 hours but 24 hours the longer it sits the better.

* if you love chocolate I have also made this with a Chocolate crust and OMG I just love the richness of it.

Not Just another Chicken recipe.

Heres my first post and hope many more to come!!!
Ok, so as most of you all know I do not eat beef so I am for ever looking for amazing recipes to try and either fail at (David says I never fail at them) or I enjoy and keep making.  So here is a Chicken recipe you can not got wrong with.


1 pound of boneless skinless chicken (breast or thighs)
1 package of taco seasoning
1 package of dry ranch dressing
1 cup of water or chicken broth


Take everything and put it into a crockpot and cook on low for 8 to 10 hours then shred the Chicken.


Now you can serve this so many ways I have taken and put it on a bun and put BBQ sauce on it like a sloppy Joe. I have served it by its self and I have served it as taco meat but this meat is so versatile you can do just about anything with it. Hope you enjoy just as much as we have!!




*this freezes well as well. I just add a little of the juice with the meat I freeze for the flavor and so it doesn't dry out
