Healthy Phily Cheesesteaks

Ok so I do not eat beef because well it cause me to have an allergic reaction and I have never liked it. So I cook a lot with chicken, turkey and pork, but I am forever trying to find healthy recipes to cook so here is one of my favorites I haven't cooked in a while.



"Cheesesteaks"


1 to 1 1/2 pounds of sliced turkey(lunch meat kind is what I use from the deli)
2 Bell pepper, (green, yellow or red)
1/2 large onion
1-2 tablespoons olive oil
garlic
pepper
Worcestershire Sauce
provolone cheese
sandwich rolls



Take the oil and place in a deep skillet and turn heat on to medium to medium high heat. Then cut the onion and peppers into thin slices. Toss those into your heated pan and let them sweat a little till not to crunchy. In the mean time take and cute your meat into strips and then add to the pan and flavor with garlic and pepper, add your Worcestershire sauce and let it keep cooking till meat is warm all the way through. Remove from heat and let set about 5 minutes and the place inside sandwich rolls equally. Cut the provolone in half and place both halves on each side of the sandwich. Place under broiler just till cheese is melted and brown. Serve right away.



This makes about 4-6 sandwiches depending on how much meat mixture you put into each roll.

Tacos

Ok so the other night I was making left overs from camping for dinner and I decided to cut some time off the next nights cooking time which is always nice during the week, when you are working and cooking and everything else that needs to be done. So this is what I came up with!



Tacos:
1pound of ground turkey/beef
1 medium onion (diced)
garlic salt, pepper (to taste)
1 package taco seasoning (see below for the homemade kind)
1/4 cup to 1/2 cup of water

So I cook up the meat and the onions at the same time, season to taste. Then I put the taco seasoning and the water into a pan( I use ground turkey so I use water to keep the meat moist and the taco seasoning mixes better that way too.)  Then I cool and refrigerate for use.


Now I next night I took out:

10 Small flour tortillas
shredded cheese
salsa(homemade is the best) But you can always use your favorite
shredded lettuce
diced onions


Then I take a deep glass pan I take my tortillas and fold them like I taco and stack the pan till there all that way. Then I take the meat mixture from the night before (I do not heat it that's not needed) and I place meat and cheese into each of the taco shells then I place in the oven at 350 for 10 minutes just till the cheese is melted and the tortillas are going to be a little brown around the edges. Then take them and allow everyone to put what they want in them. I like this because one you are still getting the soft taco but you will get a little bit of a crunch to with out having to fry them also you are using one pan and you can make all ten at once time is a big deal when you don't have much to spear.

Also you can use left over meat from dinner past I have used fried chicken, bbq chicken, it just gives it a different taste but you are not throwing meat out and you once again are saving time!!!



Taco Seasoning Mix

Combine the following ingredients and store in an airtight container. Double, triple, or even quadruple the recipe!
  • 1 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes(option if you want a little bit of heat)
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper

Oven Fried

SO I love french fries, but who doesn't right. but one of the things I think we all hate about french fries is all the fat deep frying so I have come up with a way to cute some of the fat but still have very crispy french fries that taste AMAZING.



OVEN FRIED FRENCH FRIES

8 potatoes (medium size)

3-4 Tablespoons of olive oil (just enough to coat the potatoes)

2 teaspoons of your favorite seasoning



Ok so take and cut the potatoes in strips (your choose the side you want) place in a bowl once all cut up. Then coat well with the olive oil and your seasonings ( I have found different french fry flavoring at Cabelas so its fun to try those as well)

Place in oven at 400 for 20 minutes then take and flip the fries over the fries make sure the fries are in a single layer. place back in over for 10 minutes at 400 degrees then turn your broiler on and let them finish baking for another 10-15 minutes until golden brown.

Makes enough for about 4 servings

Skinny Monkey Cookies

Ok so they are call Skinny Monkey Cookies ingredients: 3 bananas 2 cups old-fashioned oats 1/4 cup creamy peanut butter 1/4 cup unsweetened cocoa powder 1/3 cup unsweetened applesauce 1 tsp. vanilla extract Dash of cinnamon (optional) Directions: Preheat oven to 350°F. Mash bananas in a large bowl, then stir in remaining ingredients. Let batter stand for approximately 20 minutes, then drop by teaspoonfuls onto ungreased cookie sheet. Sprinkle with cinnamon if desired. Bake 10-12 minutes. Freezing Directions: Cool completely, then place cookies in a freezer bag. Seal, label, and freeze. Nutritional Information: 47 calories; 7.5 g carbs; 1.6 g fat; 1.5 g protein; 1.3 g fiber; 1 WW PointsPlus
when they call for peanut butter I get my at the health food store made fresh so I know there is no sugar add. They are amazing and they never get to the freeze part they always always get eaten I took them to a birthday party and they wanted these over the cake lol(i made the cake too lol)

Oven fried chicken

I love to cook with chicken and I love fried chicken however I can not stand all the fat in the chicken its grease. So here is my twist of Fried Chicken.



1 Pound Chicken
2 cups of pretzels
1/2 cup fried onions (frenchs)
garlic and peper to taste


1 cup of mustard
2 eggs



Preheat the oven to 350.

So crush the pretzels and the onions blend together. Then take and beat the eggs and mustard, season the chicken ( I cute them into chicken finger sizes) then roll the chicken in the mustard mixture and then in the pretzel mixture, place onto a well greased pan then bake for about and hour or until fully cooked. It turns out really moist and don't worry about the mustard flavor its not very powerful at all you can hardly taste it.


This can be served with just about anything during the summer I serve with fruit and a bake potato and during the winter with Rice or mash potatoes and a veggie

Spicy chicken

So I do not eat red meat, I have not eaten it since I was a kid. I am forever looking for another recipe that I can make chicken and make it taste so yummy. So I recently saw a recipe for Spicy Dr pepper ribs going around on Facebook it came from http://thepioneerwoman.com/cooking/2014/02/spicy-dr-pepper-ribs/


So I took this and tried it with chicken this is my version of it



Spicy Dr Pepper sauce
1 can of cherry Dr pepper
1 cup of brown sugar
1/4 cup mustard
2 tablespoon mince garlic
1/4 cup hot sauce


Take everything and put in a sauce pan and cook till reduced about 20 mins or so. Also my husband and father in law like it hot so I also added a tablespoon of crushed red peppers.
now once this is done place in fridge to get cool.


I take chicken breast and place them on a well greased pan and then brush with the sauce. Because you are working with raw meat make sure you are placing the sauce into 2 separate bowls one for extra for dipping and one for the raw meat. Cook at 350 for about 30-45 mins OMG it turns out so tender.

Everyone loves Eggs.....

So I grew up in a home where we have to cut a lot of corners to afford things. I loved it because we got very creative on a lot of things. Well when we could afford it my mom would make me egg rolls, so here is my version of egg rolls that I love making anytime I can and it seems like my friends and family love them just as equally.



My Meat Egg rolls


1 pound of ground meat (beef, chicken or turkey)
1 medium bag of slaw mixture (this is cheaper and faster then buying and shredding all the veggies)
1/2 cup hoisin sauce
1/4 cup of water
1 medium onion diced
garlic, pepper and salt to taste
1 package egg roll wrappers
oil for frying



Grab a big pot and cook the ground meat and the onion on medium high heat. Once cooked all the way add the slaw mixture and hoisin and water place a lid and reduce heat to low heat the steam from the water will cook the veggies to perfection. Then take off heat and let cool its easier to work with the meat mixture when its not hot. Once cool to handle place spoon or so in egg roll wrappers and use  water or egg to seal such. Then fry to golden brown!!!! Be careful though coming right out of the hot oil will be very hot to eat.
